Gooey Chocolate Chip Cookies

I had the urge to bake today so decided to give some Chocolate Chip Cookies a go. I slightly amended a BBC Good Food recipe (I didn't have muscovado sugar so replaced with brown sugar) and halved the ingredients listed below to made 8 cookies...

Ingredients:

150g butter (softened)
80g soft brown sugar
80g granulated sugar
2 tsp vanilla extract
1 large egg
225g plain flour
pinch of salt
1/2 tsp bicarbonate of soda
200g milk chocolate chips


Preheat the oven to 190C/Gas Mark 5. Grease a baking tray or line with greaseproof paper.
Cream the butter and sugars together in a bowl. Then mix in the vanilla extract and egg (always have spares... in case this happens... oops!).


Sift the flour, bicarbonate of soda and pinch of salt into the mixture and mix with a wooden spoon. Mix in the chocolate chips.

Place small mounds of the mixture onto the tray, at least 4cm apart. 

Bake for 8-10 minutes or until brown and crispy around the edges. Leave to cool for 1-2 minutes on the tray and then cool on a wire rack.


Eat warm with a glass of milk. Yum!
