My mid year resolution is to eat exceptionally healthy and exercise every day in the hopes of looking like Queen B at the Grammys... fit.
Doing a million squats a day and living off chicken and vegetables is hard... so I found Linda Wagner's following recipe for avocado brownies that helps with the chocolatey cravings without the guilt. They are also gluten free.
Avocado Chocolate Brownies
200g dark chocolate
2 mashed avocados (best done with a food processor to avoid lumps)
4 eggs
200g raw sugar
60g raw chocolate powder
60g coconut or almond flour
2 tsp vanilla extract
pinch of salt
1. Preheat the oven to 180 C and grease/line a baking tin (I used 10 x 10 inch).
2. Melt your dark chocolate and leave to cool slightly.
3. Whisk the eggs and sugar together in a large bowl until light and fluffy. Gradually add the melted chocolate.
4. Stir in the salt, vanilla extract, chocolate powder and coconut or almond flour.
5. Add the mashed avocado and blend well to avoid lumps.
6. Pour the mixture into your greased tin and cook for approximately 25-30 minutes. I cooked for about 35 minutes as the mixture was still very squidgy in the middle but they hardened up whilst cooling.
They are delicious served with a spoonful of greek yoghurt and some raspberries!
