Did somebody say pie?

So I avoided the healthy baking for a day to make a key lime pie for a friend's BBQ. I've never ventured far from the cake side of baking so it was a bit of an experiment that turned out to be relatively easy and quite delicious!


Key Lime Pie

Base:

250g digestive biscuits
100g melted butter

Filling:

405g can of condensed milk
Zest and juice of 5 limes (this takes a little while... and don't get the juice in a paper cut...)
300ml double cream

For the topping (all optional):

Whipped Cream
Lime Zest
Dark Chocolate


1. Take out any anger or frustration on the biscuits by bashing them in a sealed bag with a rolling pin. Mix with the melted butter.

2. Press the base mixture into a 9 inch round loose-bottomed tart tin. Make sure to go up the sides. Leave to chill for at least 10 minutes.

3. Whisk together the cream and condensed milk. Then add the lime juice and zest. It should immediately thicken slightly but keep whisking for approximately 3 minutes.

4. Pour the mixture into the tin and leave to chill for 2 hours.

5. Remove from the tin and serve with whipped cream, lime zest and dark chocolate swirls!
